Forged by one family, carried by another. The Warehouse was built by a second-generation Italian family who poured their hearts into every dough, every sauce, every late-night service. As they pass on the apron, we're stepping in to keep the fire lit — and the recipes intact.

We've spent years in large-venue Italian kitchens — feeding hundreds, plating to a packed room, learning what it takes to serve real Italian food at scale without losing the soul of it.

What we bring is a family-business mindset and an honest love for Italian food. The kind that gets you to market at 6am for the right tomatoes. The kind that argues over basil. The kind that wants you to feel — when you sit down at our table — like you've been welcomed into someone's home.

Our wood-fire oven hits 450°C. Dough rises slowly — over days, not hours — and meets the flame for 90 seconds. That's where the leopard spots come from. That's where the smoke lives. That's the difference between a pizza and a true pizza.

We don't take shortcuts. We feed the fire ourselves. We watch the dough proof. We argue about the right amount of basil. It's the only way we know.

Do I need to book a table?
Walk-ins are always welcome, but Friday to Sunday fill up fast — we recommend booking a table online to be sure of a spot. You can reserve for up to 12 guests on our reservations form; for larger groups, get in touch about functions.
Where are you, and is there parking?
We're at 11 Gilbert Road, Preston VIC 3072. There's free street parking nearby, Tram 11 stops close by, and we're about 15 minutes from the Melbourne CBD.
What are your opening hours?
We're open for dinner Wednesday to Sunday from 5pm (Friday and Saturday until 9:30pm). We're closed Monday and Tuesday.
Do you have vegan, vegetarian and gluten-free options?
Yes. We offer gluten-free pizza bases and vegan cheese, plus a range of vegetarian and vegan dishes — these are marked on the menu. Just let our team know about any allergies or dietary needs.
